Recipe: Chocolate Ganache Gelato

This recipe is for 6-8 servings. It should take you around 2h45 minutes to make.



For the Ganache:

  • 1 cup double cream
  • 1/3 cup sugar
  • 2 tbsp. Ladismith salted butter
  • 2 cups dark chocolate chips or chunks
  • 1 tsp. vanilla or caramel essence

 For the Gelato:

  • 2 eggs, beaten
  • 1/4 cup milk



  1. In a small saucepan, combine the cream, butter, and sugar over medium heat. Whisk constantly until the mixture simmers and the sugar dissolves.
  2. Remove the pan from heat and stir in the chocolate chips/chunks and the essence. Continue stirring until smooth and the chocolate melts completely.
  3. Allow the ganache to cool before moving on to the gelato base. When cooled to room temperature, whisk in the eggs and milk until well combined.
  4. Return the mixture to medium heat and continue whisking or gently stirring until warmed again. Avoid boiling.
  5. Remove the gelato base from heat and let it cool, stirring occasionally. Once it reaches room temperature, transfer it to a freezer-safe container and freeze for at least 2 hours before serving.
